I'm so excited Spring is right around the corner! I can finally put away my winter coats and pull out my sandals, brightly colored dresses, and off the shoulder tops. The temperatures are warming up and everything seems so lively! I am always happy for the change in seasons. They always seem to shift at just the right time! With spring, comes basketball and just like with tailgating during the fall, I love getting together with friends for basketball watch parties! Of course, you know that with any gathering, lots of good eats are going to be involved! I've got the perfect taste of home dish for you to bring to the next game night! It's quick, it's easy, and you know it's delicious! Curly's Baby Back Ribs & Roasted Garlic Parmesan Mashed Potatoes will be game night's crowd pleaser! Trust me on this one loves!
Here's What You Need: (Ribs)
2-3 packs of Curly's Baby Back Pork Ribs
Additional BBQ Sauce of Choice (OPTIONAL)
The baby back ribs are super simple to prepare. You can either grill them outside on a gas or charcoal grill for 10 quick minutes or bake them in the oven, like I did for about 20-25 minutes.
Either way you choose, they'll be ready in no time, with no fuss. Your friends will think you spent all day preparing them! If you'd like a super saucy, finger-licking good rib, add a little more BBQ sauce to the ribs once they're done.
The Roasted Garlic Mashed Potatoes can be prepared while the ribs are cooking. This is my absolute favorite way to prepare mashed potatoes! The roasted garlic adds such an incredible flavor to the potatoes, you'll never want to make them any other way.
Here's What You'll Need (Potatoes)
2 Whole Garlic Bulbs
1/2 cup of milk
6-8 medium Russet Potatoes (skin on)
1 cup Grated Parmesan
1/2 stick of butter
Salt and Pepper to taste
1.) Gently wash the potatoes then cook them in saltes boiling water with the skin on.
2.) While the potatoes cook, place the garlic bulbs in a 450 degree oven and roast for 20 minutes. (You can bake the ribs at the same time.)
3.) Once the garlic has roasted, take them out and let them cool. Once they've cooled, cut the garlic bulbs in half.
4.) After the potatoes have cooked and cooled, add milk, butter, and salt and pepper.
5.) Once the garlic has cooled, you can squeeze the cloves directly into your mashed potatoes.
6.) Last but not least, add Parmesan to the mashed potatoes. Combine well and taste. Adjust the seasoning to your liking. You're absolutely going to love mashed potatoes prepared this way!
Cut the baby back ribs and enjoy your meal!

Is it me or did January drag on for what seemed like forever and a day? The good news is that it's February which means black history will, once again, get a little shine! During Black History Month, we celebrate all things melanin including the innumerous achievements and contributions black people have and continue to make day to day. From education to sports, entertainment to politics, we have left insightful marks on the history of the world. Everything from our culture has been imitated which is said to be the greatest compliment. We are seriously so dope!!! As I have mentioned before, it's a challenge to sum up all the magic the oozes from the sheer existence of black people. Our creativity and inspiration rank supreme!
If you can't already tell, I am super excited for this post today because not only am I sharing one of my favorite family recipes with you but I'll also be sharing the Black History Month Virtual Potluck as well! Every day this February, in honor of Black History month, you'll be able to enjoy delicious dishes prepared by myself and 27 other creative black food bloggers from around the globe. There's sure to be something for everyone as dishes will vary from African to Creole, Caribbean to Southern, in categories ranging from meat, seafood, vegetarian, vegan, beverage, and dessert. When ever I'm asked to contribute food for a potluck, cooking something that reminds me of home is usually my go to, so my contribution for the BHM Virtual Potluck is Crawfish Etouffee!
My mother is from Louisiana so I ate a lot of Cajun/Creole inspired cuisine growing up and Crawfish Etouffee was and still is one of my favorites. If you're unfamiliar with Etouffee (eh-too-fay), it originates from a French word that means to smother. This dish is made with a traditional roux, which adds that unique and distinctive flavor found in most New Orleans inspired dishes. It is thick, hearty, and jam-packed full of flavor! I load this dish up with crawfish but have made it with shrimp as well, which is an option. With a little prep of veggies ahead of time, this meal can be on the table for your family in 30 minutes! It's the perfect recipe for a potluck and I'm excited to share this one with you and all of my virtual potluck buddies!

Crawfish Etouffee
Crawfish Etouffee is a quintessential Cajun and Creole dish. It's a thick and hearty dish full of plump crawfish and jam packed with flavor.
prep time: 20 MINScook time: 30 MINStotal time: 50 mins
ingredients:
* 1 stick of butter or 1/4 cup of vegetable oil
* 1/3 cup of all-purpose flour
* 1 TBS Cajun seasoning
* 1 tsp garlic powder
* Louisiana Hot Sauce to taste
* 2 cups seafood or chicken stock
* 1 cup of green onions, chopped
* 2 stalks of celery, chopped
* 1 small to medium onion, chopped
* 2 cloves of garlic, chopped
* 1/4 cup of parsley, chopped
* 2-3 cups of Crawfish tails
* cooked white rice
instructions
1.) Melt butter or heat vegetable oil in a cast iron skillet or heavy bottom pot.
2.) Slowly whisk in flour over a medium to low heat continuously until the roux is a chocolate brown. This will take 10-12 minutes.
3.) Mix in vegetables (onion, garlic, celery, and green onions) and cook until tender. This will take 3 minutes. Reserve some green onions for garnish.
4.) Add crawfish tails and season with Cajun seasoning and garlic powder.
5.) Add stock and combine all of the ingredients. Let the mixture simmer 20-25 minutes. Mixture will thicken slightly. Add hot sauce to taste.
6.) Add mixture to a plate and add a scoop of cooked white rice.
7.) Garnish with parsley and green onions and enjoy!

Alternative Dish for Leftover Mixture:
You can use the additional mixture to make crawfish pistolettes or crawfish pie. This mixture would also be great over a baked piece of fish or a baked potato.

I just love the winter time! With the holidays and cool weather, you can't help but be in a happy mood. There's something so nostalgic about bundling up in front of the fireplace with a hot cup of cocoa and layering up with your favorite chunky sweater to brave the chilly outdoors temps during this time of year. Comfort food is also high up on the list when the weather is cooler! So much so, it can be pretty easy to pack on a few extra pounds when you've got layers of clothing to hide behind! To help me stay on track during the winter, I love eating lettuce wraps. They are guilt free, low in carbs, and high in flavor. You can add just about anything you want to them. The possibilities are limitless! What's even better is that they are quick and easy to make. For this recipe I used Curly's Pulled Chicken to make my lettuce wraps! They were amazing and on the table in less than 20 minutes.
~Here's What You Need To Make BBQ Pulled Chicken Lettuce Wraps~
* Curly's Pulled Chicken
* 2 Cloves of Garlic (minced)
* Sesame Oil (2 TBSP)
* Butter Lettuce
* Shredded Carrot Sticks
* Green Onions (Thinly Chopped)
It is amazing how easy it is to make these bad boys!
Heat sesame seed oil in a skillet and add garlic to brown lightly.
Add the Curly's Pulled Chicken, Carrot Sticks, and Green Onions to the skillet to heat through. This will take no longer than 5 minutes. Stir continuously.
Separate lettuce and add 1-2 spoonfulls of the mixture into the wraps. At this point you can add more green onions and carrot sticks. Ladies and Gentlemen...that is it! This quick and easy meal will be a BIG dinner time favorite. If you have any mixture left over, adding it over a bed of jasmine rice or using it to make a quesadilla would be delicious! This mixture goes a long way and will taste great any way you slice it!

My favorite time of year is the fall for so many reasons!
The weather is cooler, the leaves are starting to change, and football season is in full swing! I LOVE football season and everything that comes along with it, especially the tailgating because of...well...THE FOOD! We are in the heart of tailgating season and I have created a delicious, and easy to make tailgate recipe that will satisfy any hungry football fanatic! Using Curly's RoadTrip Eats West Coast IPA Style Pulled Pork, I made these yummy pulled pork potato skins! If you prep ahead of time, they will be ready to go in time for the game!
Here's What You Need:
Curly's West Coast IPA Style Pulled Pork
8-10 small potatoes
Olive oil
Butter
Salt & Pepper
2-3 scallions (chopped)
Cheddar Cheese
Sour Cream

Curly's West Coast IPA Style Pulled Pork
8-10 small potatoes

There are a few tricks that can make this dish ready to go in about 25-30 minutes!
* Preheat the oven to 400
* Cut 8-10 small potatoes in half, season with olive oil, salt, and pepper, then place them
cut side own on a cookie sheet.
* Cook for 15-20 minutes. You should be able to stick a fork through the potatoes easily.
* While potatoes are cooking, cut up scallions and heat up the pulled pork and butter,

Once the potatoes are cooked, let them cool for a few minutes then scoop out the potatoes leaving about 1/4 of the potato in the skin. (Save the scooped out potatoes for a nice mash later!)

* Preheat the oven to 400
* Cut 8-10 small potatoes in half, season with olive oil, salt, and pepper, then place them
cut side own on a cookie sheet.

Add a little more seasoning to the inside of the potatoes, brush the inside with butter and add back to the oven for a few minutes.

Pulled Pork Tailgate Potato Skins
My favorite time of year is the fall for so many reasons!
The weather is cooler, the leaves are starting to change, and football season is in full swing! I LOVE football season and everything that comes along with it, especially the tailgating because of...well...THE FOOD! We are in the heart of tailgating season and I have created a delicious, and easy to make tailgate recipe that will satisfy any hungry football fanatic! Using Curly's RoadTrip Eats West Coast IPA Style Pulled Pork, I made these yummy pulled pork potato skins! If you prep ahead of time, they will be ready to go in time for the game!
Here's What You Need:
Curly's West Coast IPA Style Pulled Pork
8-10 small potatoes
Olive oil
Butter
Salt & Pepper
2-3 scallions (chopped)
Cheddar Cheese
Sour Cream

Curly's West Coast IPA Style Pulled Pork

There are a few tricks that can make this dish ready to go in about 25-30 minutes!
* Preheat the oven to 400
* Cut 8-10 small potatoes in half, season with olive oil, salt, and pepper, then place them
cut side own on a cookie sheet.
* Cook for 15-20 minutes. You should be able to stick a fork through the potatoes easily.
* While potatoes are cooking, cut up scallions and heat up the pulled pork and butter,

Once the potatoes are cooked, let them cool for a few minutes then scoop out the potatoes leaving about 1/4 of the potato in the skin. (Save the scooped out potatoes for a nice mash later!)

* Preheat the oven to 400

If you're anything like me, you love breakfast at anytime of day! I can not count how many times I've made pancakes, bacon, and eggs for dinner! I mean, you're talking to the girl who eats waffles for a snack! One of my favorite meals to make for a weekend breakfast or "breakfast at dinner", is a frittata. Mostly because you can make a frittata with just about anything you have on hand. It's the perfect solution for leftovers! You all know I enjoy making meals that are quick, easy, and delicious and one of my favorite fridge staples is the Curly's Kansas City Style Brisket Burnt Ends. This recipe is made with one of Curly's new RoadTrip Eats BBQ products, which is a perfect way to celebrate Curly's 30th birthday! If you ask me, I think a 30th birthday is a HUGE milestone, so I decided to make a HUGE dish that will feed up to a family of 4 in 30 minutes or less! My Curly's Brisket Burnt Ends and Veggie Frittata yields up to 8 servings, requires minimal ingredients, and takes no time at all to prepare. You'll have a yummy dish on the table for your family by the time Jeopardy ends.
Here is what you'll need:
Ingredients
1.) Preheat oven to 375 degrees
2.) In a large bowl, beat the eggs together with the seasoning of your choice. Add a splash of milk. (optional)
3.) In a large skillet, add onion and mushrooms and saute until they've softened. Once softened add the Curly's Kansas City Style Brisket Burnt Ends to heat and combine with onions and mushrooms.
4.) After defrosting and draining the spinach, add to the mixture and carefully stir to combine.
5.) Directly into the skillet with the bbq and veggie mixture, pour eggs and gently stir to combine.
6.) Add cheese and then place tomato slices on top.
7.) Bake for 25 minutes.
8.) As soon as it's done, serve right out of the pan!
